Welcome to OneSpeed Pizza! I'm truly excited about our new adventure, which after thinking about it isn't really new at all, just a culmination of things, ideas, people and affections that have been with me for a long time.

As most of you already know, Waterboy was started so I could bring a very personal idea of what I considered a good restaurant to Sacramento's Midtown. I cannot believe 13 years have gone by! By and large I feel as though we've been successful (though maybe not super profitable) in cultivating an astounding group of folks who've supported me, my restaurant and my amazing employees. Sometimes I'm just so humbled by the people I've been blessed with.

If there's a constant pang in my culinary heart I'd have to say that the lack of a pizza oven is the only thing that's kept me from culinary happiness. I was fortunate to have been involved in a few restaurants that featured pizza and the stamp it left on my cooking DNA has led me here.

In many ways OneSpeed isn't a lot different from the Waterboy - Amazing ingredients, simple preparations and great service. But there are some differences: more of a neighborhood vibe, more relaxed attire, pizzas, delivery, a TV (the TV will only be on when it's warranted i.e. big games, big events, debates, etc. - I know this will cause some of you pain but I just feel it's going to be ok).

Plus, there's a fully open kitchen so my kitchen staff is one with my dining room, just like cooking at home.

As for the name....once again, all the cool names have been taken so I had to dig deeper. OneSpeed came to me one day and really just sort of took hold. It's no secret that I've had an ongoing love affair with old Schwinn cruiser bikes - finding, buying, fixing, selling, giving, etc. - also, I thought the old cruiser bike was an apt metaphor for the slow food movement which I support and believe in. Slow bikes, slow food, a general slowing down of our Crazy, Too Busy To Converse Over A Good Meal lifestyle we've all become accustomed to.

So come by and say hello, ride your bike (geared bikes are cool too), enjoy some great service, a delicious pizza or a glass of wine - we look forward to seeing you!
